Mine turned cloudy ...I just canned some this week. Mine turned cloudy after sitting for a couple of days but think they are okay. Mine also lost water. Pretty sure mine is doing it on cool down. All of them sealed so I am not worried about them going bad. Wonder if I will have problems with them turning black when cooked. After canning these I found a recipe that calls for putting lemon juice or some other citrus product in with them to keep them from turning. It can also be that the lids aren't tight enough, which seems especially important with pressure canning. I wouldn't change the headspace to compensate, next time just make sure you have the ring band screwed on securely.
