Everything I've read about spinach says that it is good for the diseases that involve inflammation as it contains a lot of compounds that reduce it. Rheumatoid arthritis is on the list of diseases that spinach helps. I save seed from most of mine.<br /><br />Toni, it could be hard in your zone to overwinter some things. But spinach can often be overwintered without protection in zone 5 (or so I've been told). I'm always happy when my spring crop of sweet, mild tasting spinach has grown large enough to harvest.<br /><br />I don't weigh and count my herbs in the totals unless I snip a big bowl of them at once, like basil and parsley. My spinach is not as robust as last year's patch also.
