The colorful vegetables are more interesting. Though you can't see it, I had squash casserole for dinner too. I don't usually eat this at the dinner table. I often have it as dessert in front of the TV. There isn't that much sugar in it - about 1.5 teaspoons for 3/4 a cup of squash. But It feels like dessert to me.
I love roasted vegetables too. Yum. Here it is my carrots, my purple sweet potatoes, and not my onions. I seasoned them with dried rosemary form the garden. I think it is one of my favorite ways of doing vegetables. So easy as long as the oven is on for a long time during the day. And so delicious.As you probably guessed I'm still harvestless this winter. We have folks skating on the pond in the middle of town now. So I'm sure the ground is frozen solid. I'm guessing I still have about three months more of no harvests. Luckily I get to see all of yours to keep me happy over the winter.

My harvest this week is not very impressive, so I hope some others will be able to contribute something better! At least you have some frozen veg to use, whereas I have none (except chillis).
ReplyDeleteI don't get tired of greens either - they are a favourite. I'm just getting used to using them out of the freezer - before now, the only frozen greens I ever had in there were spinach (for lasagna) and collards (for soup).
ReplyDeleteYour roasted vegetables look so tasty. We have been eating then a lot too, although not from our garden. We are too many for such a small garden to have stores ,and I still need to work on upping my production.
ReplyDeleteI haven't even touched the kale in my freezer. LOL. Every year, I have good intentions about eating it during the winter time and every year, it just sits. Maybe I'll make a soup today and just throw it in.
ReplyDeleteThe roasted vegetables look delicious. I agree that rosemary holds up nicely with the high temps and seems to go with most every vegetable I roast.

ReplyDeleteI don't have to store my greens in the freezer for the winter, but I have been using my frozen roasted peppers and pureed tomatoes. The weather has become dry and mild again so my garden is still producing. I wish it would rain...
ReplyDeleteYour meals look delicious again except for the shrimp. I am not a shrimp lover unless it is breaded with all that bad stuff! I don't eat enough greens except the little bit in my smoothies and in my salad. Little warmer today and makes me long to get out there gardening but know it won't last! Nancy
ReplyDeleteIt sounds like you have a good selection of greens, given your 'forbidden' list. I don't do a whole lot of really creative things with mine, since I enjoy the flavor of the greens themselves so much.
ReplyDeleteOne of my enduring memories of childhood meals is chard. We ate it a lot, either with butter or with gravy if we were having a roast. I still love the taste. Sadly my kids don't.

ReplyDeletePepper vinegar is a standard condiment on Southern greens. If you can't use peppers, maybe just try a few drops of Balsamic or another vinegar to perk things up a little. Here it's just bag after bag of frozen green beans.
