Harvest Monday 7 April 2014
Still nothing is being harvested from the garden. But I am still eating some preserved things. The frozen spinach is still going strong.
As is the chard and kale. I probably have three more weeks, maybe more of greens in the freezer. And it is almost greens time in the garden. Not that I've seen any new leaves forming on the overwintered spinach and kale, but I have to believe it is going to happen. Maybe at the start of May?
The was the last of the frozen squash puree that I made. But I still have five more squash to eat. And I have sweet potatoes that need to be eaten by June as they start to sprout then.

Its been a long time since I last participated Daphne, so am pleased to be part of Harvest Monday again; and looking forward to meeting and sharing growing notes with other veg gardeners.

Ripe. I actually used frozen mango.
DeleteI blanch for two minutes (from when it hits the water) and cool immediately in ice water. Then I squeeze out the water and freeze it in a block.

ReplyDeleteI'm with Norma - my spinach never looks this fresh and green after freezing. I do ok with chard though. Very nice looking meals..

ReplyDeleteLovely meals, I'll have to learn to eat some frozen veggies, they sure come in handy when there's no harvest in the winter.
ReplyDeleteDon't worry, Daphne, even though our weather here has been less severe than yours, my crops are still sparse. I did harvest a few spears of Asparagus today, though!
ReplyDeleteYour meals are still looking so good. I have to agree that your frozen spinach looks so much nicer than my frozen spinach! Not much going on here yet but planted my seed tape carrots today and hoping! I have developed oral lichen plantis so eating is a challenge right now. Nancy
