Harvest Monday, February 18th, 2013

No harvests here. It snowed again over the weekend. We only got a few inches this time. Thank goodness. Last week was filled with calzones of different kinds. I had made some pizza dough and only used about half on pizza. So for lunch each day I made a fresh calzone. The above calzone was Jarlsburg cheese, and spinach and Korean Purple sweet potatoes from my garden stores. Korean Purple is only purple on the outside. Inside it is white. It also has a more starchy potato like texture than other sweet potatoes I've tried. My favorite filling was a mixture of mushrooms, spinach, cheese, and ham. I really love the combination. So much so that when I made a quiche yesterday that was what I put on the inside.

I swear my stores aren't going down very quickly. I might have to do an inventory soon and see what needs to be eaten. I can send extras to my townhouse mates. Though they aren't going through the garlic very quickly. I basically told them anytime they need garlic, sweet potatoes, or squash they could come over and get some. It used to be true for onions too, but I just have a handful left. I've put the last remaining few in the fridge so they store better.

Harvest Monday is a day to show off your harvests, how you are saving your harvest, or how you are using your harvest. If you have a harvest you want to show off, add your name and link to Mr Linky below.

  1. We were lucky, missed the weekend snow. Sweet potatoes as part of a calzone filling, sounds very interesting, I would never of thought of that.

  2. I've got an unnamed purple sweet potato that someone gave me, but it is supposed to be purple on the inside. I'm going to try and get slips from it this year and grow it myself.

I've never made calzones before, and yours looks yummy. It seems like a good way to use whatever you might have on hand, or whatever sounds good at the moment.

  3. That looks very yummy. Did you cook the sweet potato and cheese together first?

    1. I cooked the sweet potato in the microwave first, but just grated the cheese.

  4. Love calzone! so glad to be back after forced hiatus; we are having another strange winter, been in the 40s at night here this week!

  5. Your calzone looks yummy. I love experimenting with calzone fillings. The worst part of this weekend's storm was the wind. Almost as fierce as Nemo's winds. The new snow amounted to only a few inches.

  6. Yes, I need to do an inventory too. I have Swiss chard in the freezer still while I'm eating fresh. Maybe there's a veggie lasagna in our future.

  7. This year I have had garlic last the longest ever. I still have several bulbs, too.

    Your calzones look delis!

  8. I never cease to be amazed by the productivity and bounty of your garden. (I wonder if I planted enough garlic...)

  9. No harvest here. I can't even get my forced bulbs to bloom properly.

  10. I'm amazed that you haven't made a dent in your stores yet. Neither have I, but there's not much going on in my garden now so I think that that will change. The calzones look delicious, and your favorite filling sounds like a winner.

  12. The calzones sound absolutely delicious. I am inspired to do up a batch of dough and have a go at them myself this week. :D

I am having the same experience with my stores this winter too. Hardly making a dent on the freezer supply and have lots of potatoes etc still to use.

  13. I definitely approve of your choice of fillings for the calzone!

  14. Oh man! That calzone looks divine! I tend to make too much pizza dough and then just make extra large pizzas, but I like this idea so much better!

  15. Your calzones look wonderful. I often make extra pizza dough, leave it to have a slow rise in a cool place overnight and make little rolls to go with marmalade and coffee the next morning. But I love the idea of calzones with leftover dough - and inspirational filling too!

  16. i haven't made calzone before despite making pizza dough frequently. I must give them a try I reckon they would be a hit and easier to fit in the oven than lots of pizzas.

  17. Your calzone looks lovely. I used some of my sweet potatoes in a stew this week. I should get better at keeping track of HOW I use my stuff. LOL.

    1. Errr until they start to brown. I suppose I ought to know. About 375F for 25-30 mins maybe. I usually set the timer for 20 mins but they are never done by then.

  19. You've got snow, and we had temps in teh 80's. Nice calzones!

  20. I have never made a calzone but yours sure looks good! I think I need to live next door for awhile and take some cooking and gardening lessons. I didn't like the dry homemade laundry powder either but this is a concentrate. I use cold water for most of my wash and the dry did not dissolve. I still use my Dreft for the whites but this homemade version works fine for the rest. Nancy

  21. Calzones look fantastic!! I don't know if I've ever heard of purple sweet potato...but it sounds yummy. I just bought some sweet potatoes and am enjoying them a lot. I bet they are even better when grown in the garden:)

  22. You make taking inventory sound exciting! You get to see what you should have made more of, what you never ended up eating, and figure out from there what you will or will not be growing. Plus you get to plan out what you need to eat to deplete your stores which makes room for new stores to be made, because this year is going to be amazing!

  23. Yummy calzone, I wish I could grow more onions - I just don't have the space plus they are pretty cheap from the farmers market.

  25. I love that you have enough stores and garden produce to share with people...I hardly produce enough for enough but have had enough thyme & rosemary lately to share with my neighbours.

  26. This is certainly the weather for something hardy like calzones. Filling it with things from your garden makes it even better.
