Harvest Monday, March 18th, 2013

No harvests as usual this time of year. But I have been using up my stores. This week was mostly about using my squash. I'm doing pretty well on it. I have just six left. Above is a black bean and squash salad with apples and lox. I also made a squash pizza (with onions and mushrooms). I really liked it. I like the spinach version better, but squash is good for a change.

I'm also trying to figure out what I'm bringing to our big Passover dinner this year. I was given "vegetables" as my dish. Last year I brought maple glazed carrots from my stores and kale fresh from the garden. But last year Passover was later and we didn't have much of a winter so the kale had put on new growth already. This year things have just defrosted and the kale looks pretty sad. No new growth at all yet. So this year will be sweet potatoes and spinach from my stores, both of which I have an over abundance. I didn't want just plain spinach so I'm trying a frittata with more veggies than usual. I think it will work out well. I'm going to use coconut milk as the milk since I can't use dairy. We usually have at least one vegetarian in the group so it is a good addition for them. So I've got the green and orange vegetables covered.

  3. I love to throw whatever veggies are around into a frittata. I never thought about using coconut milk instead of cows milk for that. I'll have to give it a try.

    My overwintered kale looks sad too. I am hoping for some new growth before it bolts, but I don't know. I should have spinach ready this week and that will be a nice change from the frozen. And then I will have a Harvest Monday with something decent to show!

  5. The squash and black bean salad looks delicious - bits of apple must make a lovely sweet contrast to the beans and squash. What kind of a dressing to you use on that?

    1. I used a maple syrup vinegrette. I should have put onions into the salad but forgot. The apples gave it a good crunch too.

  7. Does a frittata "carry" or will you prepare it at the last minute? I would think the egg would make it rubbery... but then quiches do well. Hmm. Sounds like a good Passover dinner, any way you do it, and the coconut milk is a good substitute for milk as it will also make it lighter in texture.

    1. That is my major sticking point. I'll have to ask our hostess if there is room in the oven. It would be pretty easy to mix it all together before I leave and toss it in the oven when I'm there. I think reheating would make the texture not as good. But as long as I keep the eggs down and the veggies up, it would probably work. I might try to make one this week and test what it feels like reheated.

    2. The other option is to include tofu and perhaps some nondairy cheese that melts to cut down on egg.

  10. That's a really interesting salad. I love squash and apples baked together but never thought of using them in a salad together - I'll have to try that. We eat lots of fritatta - hot, warm, room temp, cold - it's my husband's favorite lunchbag item. I alway stuff as many vegetables into them as possible.

  12. That squash and black bean salad looks delicious! Nice to have so much color when the weather is still dreary. I was expecting to have plenty of kale in the garden this winter, but it turns out either the squirrels or rabbits enjoy removing every single leaf! So I have these pathetic kale plants that are all stems and no leaves.

    1. It is smoked salmon. So uncooked, but cured. It is typically eaten as bagels and lox (with cream cheese).

  17. I made pumpkin (squash) soup yesterday from this years crop. I might have to use the rest of the (rather large) pumpkin to make your salad - sounds like a really interesting combination.
