Not much has been going on in the harvesting front with more snow last week. I made a large sweet potato and onion dish that I ate all week long with stored sweet potatoes from the garden, but my onions are long gone. The greens varied from spinach, to kale, to broccoli all frozen from the garden. The above even has tartar sauce made from my homegrown pickle relish.
I have some friends that don't eat pork and were getting some pork from their meat CSA so I've been getting the joy of fresh pork. So I sent back some carrots with them. I have way too many carrots frozen this year. I've got to check the freezer and see what else I have too much of so I can send it off to someone.

It's nice you are able to share items between yourself and your friends - helps with surpluses to be able to share it with others. I am swimming in green beans this year for some reason. Guess I put by more of it in the freezer than I realized last summer!
ReplyDeleteFresh pork for carrots sounds like a pretty good deal to me! Not that I have carrots myself. Maybe someday I will grow enough carrots to be able to freeze some. I had fresh spinach this week and that was enough to make me happy. Today it is frozen again, though it looks like later this week it will warm up a bit.

ReplyDeleteI'm slowly working my way through some of my freezer stash also, but there's a lot left in there! It's good that you are able to share, I'm not so sure that my friends would want my frozen veggies.
ReplyDeleteLovely meal from your stores......is there a particular veggie you feel freezer's the best and one that you wouldn't bother with? I didn't relise just how much friends and neighbors enjoyed my surplus produce until we went on holidays and I asked a few to drop in and pick what they liked while giving the garden a water, apparently there was a stand off over the tomatoes! lol!

Spinach and kale freeze very well. I'm not a big fan of frozen green beans or snap peas. I don't like their texture as much when frozen. Though I do freeze some beans as I put them in soup.

ReplyDeleteI definitely need to grow and freeze more kale next year. And I've just ordered my sweet potato slips - I've never grown them before, so I'm looking forward to that experiment!
ReplyDeleteI didn't have carrots last year, hopefully I can get some going this year. I'm not a fan of frozen green beans either, will try canning or dehydrate the beans someday, maybe I'll use more of the stash.
ReplyDeleteI haven't had any sweet potato in ages but it will be harvest time soon so I will again. I could buy it but with so many things coming out of the garden at the moment its difficult to justify so I will wait til next month when mine should be ready.

You are encouraging me to try growing sweet potatoes... I love them and the idea of having them in the patch is very appealing!
