Harvest Monday 7 April 2014

Still nothing is being harvested from the garden. But I am still eating some preserved things. The frozen spinach is still going strong.

Mango Curry with fried plantains and chard
As is the chard and kale. I probably have three more weeks, maybe more of greens in the freezer. And it is almost greens time in the garden. Not that I've seen any new leaves forming on the overwintered spinach and kale, but I have to believe it is going to happen. Maybe at the start of May?

The was the last of the frozen squash puree that I made. But I still have five more squash to eat. And I have sweet potatoes that need to be eaten by June as they start to sprout then.

Harvest Monday is a day to show off your harvests, how you are saving your harvest, or how you are using your harvest. If you have a harvest you want to show off, add your name and link to Mr Linky below.

  2. Did you use green or ripe mango to make your mango curry?
Do you mind posting how you freeze your spinach? Mine never comes out so fresh looking.

    1. Ripe. I actually used frozen mango.

I blanch for two minutes (from when it hits the water) and cool immediately in ice water. Then I squeeze out the water and freeze it in a block.

  8. Lovely meals, I'll have to learn to eat some frozen veggies, they sure come in handy when there's no harvest in the winter.

  9. Don't worry, Daphne, even though our weather here has been less severe than yours, my crops are still sparse. I did harvest a few spears of Asparagus today, though!

  10. Your meals are still looking so good. I have to agree that your frozen spinach looks so much nicer than my frozen spinach! Not much going on here yet but planted my seed tape carrots today and hoping! I have developed oral lichen plantis so eating is a challenge right now. Nancy

  12. Finally completed a post on our experiments with growing rice at home, and I like to think that some day even your rice will be from local sources!
