Harvest Monday, 24 March 2014
Most of my meals have been pretty boring since I've gone on my elimination diet. Luckily it won't last long which is a blessing and a curse. A blessing because I'll get to eat other things again, but a curse because it is short enough that it isn't worth the time to develop recipes that are interesting. (Frozen kale from the garden.)
(Butternut squash and frozen broccoli and dried onion, garlic, and Italian seasonings from the garden.)
So until it is over most of my meals are plain veggies, a starch that is either brown rice or buckwheat, and a protein that is either turkey, chicken, or fish. (Frozen spinach from the garden.)
Sometimes I get a little creative by mixing things and making sauces. But DH won't eat these so I don't try very hard at it. (Frozen spinach from the garden. Dried onion, garlic, thyme to season the rice.)
Soups for my lunches are a good change of pace. I can't add beans, wine, or soy sauce, but otherwise they tend to be much like my old soups. The above has lots of garden fair. Celery, butternut squash, zucchini, garlic, and sage.
My after dinner drink has been replaced with a mug of peppermint tea. I'm not sure I saved enough peppermint to get me through the whole month. Usually I just drink tea occasionally when I'm really cold in the winter or as a social drink. I do have some chocolate mint too. Usually I drink that with chamomile and the peppermint with green tea. But I might have to drink it straight when the peppermint runs out.

It is good that you are not a picky eater. I know plenty of people that would not eat the things you are able to eat. I do hope you are able to get answers from the diet.

ReplyDeleteWell, as challenging as this all is, I do hope you are able to find some answers! Then, with growing and harvesting right around the corner, you'll know exactly what you can and cannot eat! Hopefully there are much more "cans" than "can'ts" :-) Happy Spring!!!

ReplyDeleteRead your earlier update. Try increasing the allowed fats to avoid the ravenous feeling (unless you're trying to lose weight). Wish you well.
ReplyDeleteThanks Susan. I have started adding olive oil to more things which helps a lot. And no I'm not trying to lose weight. I wish I could add avocados to my diet, but I'm keeping out anything I've ever suspected might be a problem. Avocados aren't high on the list but they are there.

ReplyDeleteReading your last two posts, I'm amazed by how much work goes into this! I hope you get the answers your looking for or at least a better sense of things. Reading about what you're going through, it's almost like trying to find a needle in a haystack.

ReplyDeleteSort of. I have a few symptoms that have gotten better and some worse. So we will see. It often takes a couple weeks to see anything from what I've been told.
DeleteThat makes sense, though it must be challenging to be so patient to find out! Will the outcome affect your planting list?
DeleteI suspect it will. At least if I find out soon enough. My suspicions are in the legume family. I don't know how far the issue goes though. Peas and favas will be planted as I won't know anything by then. But if beans prove to be a problem then I'll replace them with something else.
